Every time I’ve visited, it’s been full of people, but service is quick and friendly at the counter, thanks to Justin’s efficient front of house management.
You can snag a drink from their old-fashioned refrigerator appointed with modern cooling elements, or choose to order from their cocktail menu and enjoy a freshly crafted specialty.
This Mexican-focused modern eatery is sure to help you gain new appreciation for old favorites, and Menu items include a variety of Mexican favorites including a wide array of tacos, sopes (elevated with duck confit and the most perfect mole), ahi ceviche with finger lime, quesadillas, and elote.
If you’re gluten free, vegetarian or vegan, there are several menu items that will cater to your needs. This forward-thinking eatery is serving up a variety of dishes that considers of all of its customers.
Healthy options include the elote bowl (making simple corn fun and delicious), ceviche del atun with bright citrus flavors and a mango chile gel (pictured below), and the kale and roasted squash salad with mole vinaigrette, manchego and candied pumpkin seed.

Unique eats for a great value on the menu are the sopes with rich, flavorful duck confit and a mole you’ll want to take home to mama, the brussel sprout and wild mushroom quesadilla with salsa de arbol that packs a subtle but rich punch, and the fried maitake mushroom taco, a favorite of Chef Travis.

If you are one of the few people in town who hasn’t been to Cochinito yet, you can be sure that you’re missing out. After opening February 28th, they’ve stayed busy catering to crowds from 11am-9pm Monday through Thursday and open an extra hour on Friday and Saturday nights until 10pm at 10 N Post St, Spokane, Washington.
